Dodge Ram B250 V6 Red Light On

Hi All - I'm new to working on water-cooled engines, but my dodge van had a wonky oil pressure light on start up - I had recently changed the oil and only see that light if it burns off too much oil and I do a hard corner. Next day it was out and stayed out on a 50 mile drive. Then on the way home it came on and stayed on. pulled into jiffy lube had the oil changed just in case - 1 mile later the oil pressure would get up to where it usually was, and without my foot butterflying the gas like...
